Auberge began in the Napa Valley, and MICHELIN reads this as the same idea carried to the Hudson Valley: sixty-five cabins on a working farm in Gardiner, more properly cut off than most resorts in that country. The Thistle Spa is the large indoor piece; Clay, the restaurant, cooks Hudson Valley flavours partly from the farm's own produce.
