What the classifiers highlight
Architect Patrick Bouchin turned an antique farmhouse outside Roanne into this 15-room hotel for the Troisgros family, understated enough to work as a supporting act to Le Bois sans Feuilles, their glass-walled restaurant next door. MICHELIN holds three stars over the kitchen and rates the hotel itself two Keys, still too new for a guest score.
