Founder Caryn Hibbert bought Southrop Manor two decades ago and rebuilt its seventeenth-century barns into what she calls a village within a village, starting with a cookery school before the rooms followed. A converted barn houses Ox Barn restaurant, the Meadow Spa and a spring-fed pool sit across the grounds, and The Swan serves as the village pub.
