What the classifiers highlight
Opened in 1928 and still called 'the Pen' by locals, this is Hong Kong's oldest hotel and, both guides agree, its grandest, palm and gilt in the lobby where a string quartet plays through afternoon tea. MICHELIN counts eight kitchens including Felix, the Philippe Starck rooftop room, Swiss restaurant Chesa and Cantonese Spring Moon, several ranked among the city's best.
