Owner and architect Antonio Obrador remade a 19th-century fortress on an 88-acre estate above the Bay of Palma without erasing its military past, cutting the Sentinel Suite straight into the cliff where a cannon once stood guard. MICHELIN's two Keys go to that restraint, and La Fortaleza has become one of the island's notable tables.
