A restored 1908 university building faces Amsterdam's Oosterpark through large windows under high, arching ceilings. Bespoke beds, heated floors and Diptyque amenities furnish the rooms, and the best suite adds a grand piano beside a marble soaking tub. Chef Floris van Straalen runs VanOost overlooking the park, and Fitz's Bar, named for F. Scott Fitzgerald, revives cocktails from the 1920s.
