Château Neercanne
What the classifiers highlight
The Netherlands' only terraced castle was built in 1698 by a military governor into a hillside laced with marl caves. Seven suites occupy the restored 17th-century lodgment, and downstairs a MICHELIN-starred kitchen serves under vaulted ceilings alongside L'Auberge, a Bib Gourmand bistro that plates classic dishes with a modern edge in the old chapel.
